A Tale of Korean Beef Stew

 

 A Korean style beef stew, a meat dish with sweet-salty oriental beefy taste and a kick of chili, was first discovered by a boy in one of the mall’s food court stalls during his early college days. He was fascinated by its mouth watering and beefy taste so he add it to the list of his favorite meat dishes. He’d been relishing this delectable fatty beef dish for years so he researched a recipe and cooked it for his girl on special occasions. When the time the girl cooked the dish for the boy, there’s something new to the taste -a twist of Filipino taste. Both enjoyed the new taste so they develop a new recipe by combining the girl’s ingenious cooking procedure and the boy’s usual ingredients. By the fusion of their ingredients and cooking, a new Korean Beef Stew recipe was born. A recipe that was made from team work and love. The  recipe of Filipino Style Korean Beef Stew:

Ingredients

  • 1 kg beef (chunk or short rib part), cube cut
  • ½ cup brown sugar
  • 1 cup of Japanese soy sauce
  • 5 cups of water
  • 1 whole onion, minced
  • 1 bulb garlic, minced
  • 2 pcs small star anise
  • 1 tbsp fish sauce
  • 4 tbsp sesame oil
  • 2 tsp sesame seeds
  • 1 tsp cayenne pepper
  • 1 small chillies (labuyo), sliced
  • 1 tbsp of coarsely ground black pepper
  • 1 stalk of spring onions, chopped for garnish
  • 3 tbsp toasted sesame seeds, for garnish


Preparation & Cooking

  • Dilute brown sugar in soy sauce and water.
  • Combined all the ingredients, except for the garnishing, in a pressure cooker.
  • Cooked it in medium high heat for 30 minutes (start the time when there’s a pressure).
  • Slowly unpressurized the cooker.
  • Add some fish sauce
  • Serve hot in a bowl garnish with spring onions and toasted sesame seeds.
